At Fern Hill Hotel you’ll train under Executive Chef Alexander Poltera and his award-winning team. You’ll be placed alongside trained cheffing educators in a real-world kitchen that focuses on both plated, fine-dining cuisine and mass catering for weddings and functions. All aspects of cheffing are covered, including hot and cold sections, stoves, grills, pastries and desserts, stock control, and hygiene. Menu composition, food and wine pairing, recipe book development, and buffet theory are all covered in what will be the busiest year of your life. Your cheffing career starts here.
